Rockfish Ceviche Tostadas

Ceviche is a type of seafood dish in which raw fish is marinated in a mixture of lime or lemon juice, chili peppers and other seasonings, and the acid in the citrus juice “cooks” the fish, turning opaque and firm. Ceviche Tostadas is a traditional Mexican dish where ceviche is served on crispy fried corn tortillas.  These Tostadas are a light and refreshing dish, perfect for summer or as an appetizer.
