Leftover Turkey Carnitas Tostadas

Making turkey carnitas is a great way to make use of leftover turkey, and tostadas is a great way of using turkey carnitas.

In this recipe, the carnitas are the star of the show, and pickled red onions add a brightness and tang. I’ve found that when you first pick up a tostada, it’s the last time that tostada will be in one piece. A thin layer of refried beans helps to adhere some of the ingredients together (at least for a bite or two). This tostada is topped off with pickled jalapeno, tomato, avocado, cilantro and a splash of crema.

Building the sandwiches goes pretty quickly after the ingredients are assembled. Ingredients

  • 11 ounces Leftover Turkey Carnitas
  • 6 tostada shells
  • 14 ounces refried beans
  • 1 avocado
  • 1/2 medium tomato
  • 1/2 bunch of cilantro
  • pickled red onions
  • pickled jalapenos
  • queso fresco
  • Mexican crema or sour cream
  • 1 lime
