Birria for Tacos, Quesadillas and Tortas

Birria is a traditional Mexican slow-cooked stew.  Fatty cuts of goat, lamb or beef sit in a marinade of a variety of chili peppers; spices such as cumin, paprika, and oregano; acids like vinegar or citrus juice; aromatics and other flavorings.  After marinating, the meat is slow-cooked until fall-off-the-bone-tender.  Birria is commonly served as a main dish, but has made its way into tacos, quesadillas and tortas.

“Birria-Style” is a method of preparing and serving tacos, quesadillas or tortas by separating the birria meat from the broth and then using the broth as an ingredient, the meat as a filling, and the broth as a side dish.  First, the birria is drained and the meat and the broth are each reserved separately.  Next, the meat might be shredded, and the broth might strained and clarified.  For birria-style tacos and quesadillas, the tortillas are dipped into the birria broth before they are filled and grilled.  For birria-style tortas, the bread is either be dipped or birria broth is added to the grilling surface.  After grilling, the tacos, quesadillas or tortas are then served with a bowl of the broth for dipping.

Ingredients

for the marinade

  • 3 ancho chile peppers
  • 1 cup white vinegar
  • 15 whole black peppercorns
  • 1/2 ounce fresh ginger
  • 2 garlic cloves
  • 3 whole cloves
  • 1/4 tsp dried marjoram
  • 1/4 tsp ground cumin
  • 1/4 tsp dried thyme
  • 4 ½ pounds goat leg

for the stew

  • 1 dried ancho chili pepper
  • 5 dried guajillo chili peppers
  • 1 dried chipotle chili pepper
  • 1 yellow onion
  • 10 ounces tomatoes
  • 10 cloves garlic
  • 2 dried bay leaves
  • 10 black peppercorns
  • 1/2 stick cinnamon
  • 2 whole cloves
  • 1 tbsp salt Kosher salt
  • 1 tsp dried thyme
  • 1 tsp dried marjoram
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/2 tsp minced ginger
  • 1/4 cup apple cider vinegar
  • vegetable or canola oil
