Stir-Fried Bagels with Cabbage and Bacon
Ingredients

about 1 tablespoon coarsely chopped

green cabbage

large plain bagels
cut into 1/8-inch cubes (about 6 cups)

Instructions
Mise en Place
Place 1 tablespoon soy sauce in a small bowl.
Add 1 tablespoon rice vinegar to the bowl with the soy sauce.
Toast 1/2 teaspoon of Sichuan peppercorns in a dry wok until fragrant and place in a mortar to cool.
Stem 1 dried red chili pepper and add to the mortar.
Crush the spices and place them in a small bowl.
Grate 1 tablespoon of ginger and add to the bowl with the spices.
Cut 5 slices of bacon crosswise into 1/2-inch-wide pieces
Peel and coarsely chop 3 cloves of garlic
Thinly slice 6 cups of green cabbage
Cut 2 large plain bagels into 1/8-inch cubes
Preparation
Heat a wok over high heat.
Once the wok is hot enough that a bead of water vaporizes within 1 to 2 seconds of contact swirl in the oil.
Add the spices and ginger, and stir-fry for 10 seconds until fragrant.
Add the bacon, reduce the heat to medium, and stir-fry for 3 minutes.
Add the garlic and stir-fry for 10 seconds.
Add the cabbage, increase heat to high, and stir-fry for 1 minute or until cabbage leaves just begin to wilt.
Add the soy sauce mixture and the bagels, and stir-fry 1 minute or until well combined.
Cover the wok, reduce heat to medium-low, and cook for 1 minute or until bagels have softened.
Uncover, sprinkle with 1/2 teaspoon of salt, and stir-fry until well-combined.
