Stir-Fried Bagels with Cabbage and Bacon
Ingredients
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoons peanut or vegetable oil
- 1/2 teaspoon Sichuan peppercorns
- 1 dried red chili pepper snipped on one end
- 1 tablespoon grated ginger
- 5 slices bacon about 4 ounces
- 3 cloves garlic about 1 tablespoon coarsely chopped
- 1 pound green cabbage
- 2 large plain bagels cut into 1/8-inch cubes (about 6 cups)
- 1/2 teaspoon salt
Instructions
Mise en Place
- Place 1 tablespoon soy sauce in a small bowl.
- Add 1 tablespoon rice vinegar to the bowl with the soy sauce.
- Toast 1/2 teaspoon of Sichuan peppercorns in a dry wok until fragrant and place in a mortar to cool.
- Stem 1 dried red chili pepper and add to the mortar.
- Crush the spices and place them in a small bowl.
- Grate 1 tablespoon of ginger and add to the bowl with the spices.
- Cut 5 slices of bacon crosswise into 1/2-inch-wide pieces
- Peel and coarsely chop 3 cloves of garlic
- Thinly slice 6 cups of green cabbage
- Cut 2 large plain bagels into 1/8-inch cubes
Preparation
- Heat a wok over high heat.
- Once the wok is hot enough that a bead of water vaporizes within 1 to 2 seconds of contact swirl in the oil.
- Add the spices and ginger, and stir-fry for 10 seconds until fragrant.
- Add the bacon, reduce the heat to medium, and stir-fry for 3 minutes.
- Add the garlic and stir-fry for 10 seconds.
- Add the cabbage, increase heat to high, and stir-fry for 1 minute or until cabbage leaves just begin to wilt.
- Add the soy sauce mixture and the bagels, and stir-fry 1 minute or until well combined.
- Cover the wok, reduce heat to medium-low, and cook for 1 minute or until bagels have softened.
- Uncover, sprinkle with 1/2 teaspoon of salt, and stir-fry until well-combined.
