Stir-Fried Bagels with Cabbage and Bacon

Ingredients

  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons peanut or vegetable oil
  • 1/2 teaspoon Sichuan peppercorns
  • 1 dried red chili pepper snipped on one end
  • 1 tablespoon grated ginger
  • 5 slices bacon about 4 ounces
  • 3 cloves garlic about 1 tablespoon coarsely chopped
  • 1 pound green cabbage
  • 2 large plain bagels cut into 1/8-inch cubes (about 6 cups)
  • 1/2 teaspoon salt

Instructions

Mise en Place

  • Place 1 tablespoon soy sauce in a small bowl.
  • Add 1 tablespoon rice vinegar to the bowl with the soy sauce.
  • Toast 1/2 teaspoon of Sichuan peppercorns in a dry wok until fragrant and place in a mortar to cool.
  • Stem 1 dried red chili pepper and add to the mortar.
  • Crush the spices and place them in a small bowl.
  • Grate 1 tablespoon of ginger and add to the bowl with the spices.
  • Cut 5 slices of bacon crosswise into 1/2-inch-wide pieces
  • Peel and coarsely chop 3 cloves of garlic
  • Thinly slice 6 cups of green cabbage
  • Cut 2 large plain bagels into 1/8-inch cubes

Preparation

  • Heat a wok over high heat.
  • Once the wok is hot enough that a bead of water vaporizes within 1 to 2 seconds of contact swirl in the oil.
  • Add the spices and ginger, and stir-fry for 10 seconds until fragrant.
  • Add the bacon, reduce the heat to medium, and stir-fry for 3 minutes.
  • Add the garlic and stir-fry for 10 seconds.
  • Add the cabbage, increase heat to high, and stir-fry for 1 minute or until cabbage leaves just begin to wilt.
  • Add the soy sauce mixture and the bagels, and stir-fry 1 minute or until well combined.
  • Cover the wok, reduce heat to medium-low, and cook for 1 minute or until bagels have softened.
  • Uncover, sprinkle with 1/2 teaspoon of salt, and stir-fry until well-combined.
