BLT with Taylor Ham and Fried Egg

Ingredients

  • 3 oz Taylor Ham/pork roll (see note)
  • 1 large egg
  • 2 leaves crunchy lettuce (like iceberg, bibb or romaine)
  • 2 slices white bread (or whatever bread you prefer)
  • 1 slice tomato (or more, enough to cover the sandwich)
  • 2 tbs Mayonnaise
  • Kosher salt and fresh ground pepper to taste

Instructions

  • Prepare the Egg: Crack the egg into a small bowl.
  • Prepare the Pork Roll: Slice 3 oz of Taylor Ham or pork roll. Make radial cuts in each slice so it cooks flat (see notes).
  • Prepare the Tomato: Slice a juicy, ripe tomato, and season it with Kosher salt and fresh ground pepper.
  • Prepare the Lettuce: Depending upon your preference, set aside two whole leaves of crunchy lettuce like iceberg, bibb or romaine, or coarsely chop it and set it aside.
  • Prepare the Bread: Spread a thin layer of mayonnaise on both side of two slices of bread.

Preparation and Assembly

  • Heat a cast-iron skillet over medium heat.
  • Toast the Bread: Toast the bread in the dry skillet until both sides are golden brown. Set the toast aside to cool.
  • Cook the Pork Roll: Add the sliced pork roll to the skillet and cook, turning occasionally, until the slices are browned on both sides; about 4 minutes.
  • Start to Assemble the Sandwich: While the pork roll is cooking, lay the bottom slice of toasted bread on your work surface. Place the lettuce on the bread and place the tomato on the lettuce.
  • When the pork roll has cooked, place the slices on the sandwich.
  • Fry the Egg: If necessary, add butter or bacon fat to the skillet. Tip the egg into the skillet and cook it how you prefer (sunny-side-up and over-easy provide a wet yolk).
  • Complete the Sandwich Assembly: Add the fried egg over the pork roll. Place the bread on top of the sandwich.
  • Cut the Sandwich in Half. This sandwich is easiest to eat if it is cut in half diagonally into triangles.

Notes

  • The quantity of pork roll will vary if it’s measured by the slice. Products are sold in different diameters, and how thick to slice it is a matter of personal preference; anywhere between paper-thin to as thick as Canadian bacon. To get the right amount of pork roll on the sandwich, it’s best to go by weight.
  • Cutting the slices of pork roll radially from the center to the edge of each slice will help to keep flat, and not cup up during cooking. On method is to make a single cut from the center to the edge resulting in a Pac-Man shaped slice. Another common method is to make four slices about half the way to the center equally-space around the perimeter. This will result in a sort of iron cross shaped slice.
