Pulse several times until the ingredients are finely chopped.
With the processor running, slowly drizzle in the olive oil until a smooth but slightly textured sauce forms.
Add the lemon juice and season with kosher salt and freshly ground black pepper.
Pulse briefly to combine. Avoid over-processing, as excessive blending can warm the pesto and dull its bright green color.
Taste and adjust the seasoning with additional salt, Parmesan, lemon juice, or olive oil as needed.
Transfer the pesto to an airtight container and smooth the surface. Pour a thin layer of olive oil over the top to help minimize oxidation and preserve its vibrant color.
Refrigerate for up to 5 days or freeze in small portions for up to 3 months.
