Spicy Pickled Raisins
Ingredients

white wine vinegar

sugar

brown mustard seeds

sprig rosemary

sprig thyme

dried chiles de árbol
(or 1 ½ tsp. crushed red pepper flakes)

golden raisins
Instructions
Mis en Place
Place 1/2 cup of white wine vinegar into a medium saucepan
Add 1 cup of water to the saucepan.
Add 1/4 cup of sugar to the saucepan.
Add 2 teaspoons of brown mustard seeds to the saucepan.
Add 1 sprig of rosemary to the saucepan.
Add 1 sprig of thyme to the saucepan.
Crush 2 dried chiles de árbol and add to the saucepan.
Add 1 tsp. of Kosher salt to the saucepan.
Set aside 1 1/2 cups of golden raisins.
Preparation
Bring the brine to a boil over high heat.
Reduce the heat and simmer, stirring occasionally, until the sugar is dissolved, about 3 minutes.
Mix in the raisins.
Remove from heat and let cool at least 1 hour.
