Sausage, Egg, and Cheese Breakfast Sandwich
Ingredients

pork sausage

large eggs
2
slices
American cheese
2
English muffins
2
tbsp
butter

cooking oil or bacon fat
Instructions

Set aside 2 tablespoons of butter to soften.
Break 2 large eggs into one or two small bowls.
Set aside 2 slices of American cheese.
Form 4 oz pork sausage into 2 round patties.
Slice 2 English muffins in half.
Line a plate with two layers of paper towels.
Preparation
Heat a small, non-stick skillet over medium-high heat.
Add 1 tablespoon cooking oil or bacon fat to the skillet.
Add the sausage patties and cook for 3 minutes per side.
While the sausage is cooking, toast the English muffins.
After the sausage patties have cooked, remove them with a spatula and place them on the paper towel-lined plate.
Cover each sausage patty with a slice of cheese.
Fry the eggs in the in the skillet with the pork fat.
While the eggs are frying, butter the toasted English muffins.
Place a sausage patty on the bottom piece of each English muffin.
Lay the fried eggs on top of sausage patties.
Top the sandwiches with the top piece of each English muffin.
