Alabama White Sauce is a unique and tangy barbecue sauce that originated in Alabama, in the southern United States, and has become synonymous with Alabama-style barbecue. It has a creamy, mayonnaise-based consistency and zesty flavor profile that comes from vinegar, lemon juice, and a blend of spices. The sauce is primarily associated with barbecued chicken, but it can be used with other meats like pork and turkey. It is often served as a dipping sauce, although it can also be used for basting, as a dressing for coleslaw, or as a condiment for sandwiches.
The origin of Alabama White Sauce is believed to be Big Bob Gibson Bar-B-Q, a renowned barbecue restaurant located in Decatur, Alabama. The sauce was created by Bob Gibson, the founder of the restaurant, in the 1920s, as a way to add flavor and moisture to smoked and grilled chicken. Its popularity grew, and it has become central to Alabama-style barbecue culture.
